I found that students were always interested in challenges to identify common items or things. I would locate pictures taken with electron microscopes and challenge them to identify what is in the picture.
This would cause their use of critical thinking skills and inquiry-based investigative research as they sought to identify the objects in the pictures.

I came across this online concept/mind mapping program and teachers many be interested in using in the science and math classrooms.
The program is not difficult to use, so students should be able to use it without too much difficulty.
